La Calabria, per la sua posizione all’estrema punta dello Stivale, e per la sua proiezione nel Mediterraneo, a cavallo tra il Mar Ionio e il Mar Tirreno, è stata, in passato molto più di adesso, isolata dal resto d’Italia e vicina ai popoli del bacino mediterraneo.
Ricca di colonie greche, nell’età classica costituiva quella che veniva perciò indicata come Magna Graecia, specie nella sua costa orientale. A quel periodo risalgono infatti le fondamenta di città come Locri, Sibari, Crotone, Reggio. Non mancarono poi delle presenze arabe, seppure limitate nel tempo e nello spazio.
In periodi più vicini a noi, dal medioevo in avanti, è stata poi sotto il dominio di Normanni, Svevi, Angioini, Aragonesi, Francesi e, infine, Spagnoli, per quasi due secoli, sino ad arrivare ai Borbone del Regno delle due Sicilie.
Questi avvenimenti, queste popolazioni straniere, hanno lasciato segni molto profondi del loro passaggio, e hanno arricchito oltremodo la cultura calabrese, variegandone le sfaccettature a tutti i livelli.
L’altra sua peculiare condizione, il relativo isolamento dal restante territorio della penisola, dovuto alla forma allungata del suo territorio, collinare o montuoso per ben il 91% della superficie, ha fatto sì che la Calabria sia rimasta relativamente chiusa in se stessa, conservando sostanzialmente intatta la propria identità.
Il risultato finale di questo mix di condizioni è una forte e policroma personalità del territorio, che si traduce spesso in prodotti pressoché esclusivi, come il bergamotto o la liquirizia; in coltivazioni connotate dal mantenimento di tradizioni lontane e diversificate, in prodotti dal forte sapore identitario, come il peperoncino, la Nduja, il capocollo, e tanti altri.
